The ever-elusive, all-weather beverage that can be dressed up or dressed down is nearly impossible to track down. I, however, have found one that works in most situations.
Everyone loves a good punch. Lemonade sometime just hits the spot. And who doesn’t love a warm tea when they are sick? Meet “Fresh Mint & Ginger Lemonade” (courtesy of my lovely Bon Appetit Fast, Easy, Fresh Cookbook). I first made this dreamy concoction over the summer when I hosted a Bachelorette Brunch for one of my closest girlfriends. It was the perfect non-alcoholic drink and incredibly refreshing.
That same weekend, I lost my voice (too much fun at the party!). I heated the lemonade, and have a perfect throat soother. And when I was looking for a fun, but low-key cocktail, there it was again! But this time with the lovely addition of vodka (or gin if that’s your particular persuasion).
Once you get beyond the chopping and peeling of the ginger, it’s an incredibly easy recipe (and VERY easy to double or triple).

Fresh Mint & Ginger Lemonade
- 1/2 cup (packed) fresh mint leaves
- 1/3 cup chopped peeled fresh ginger
- 1/3 cup honey
- 2 cups boiling water
- 1/3 cup fresh lemon juice
- 1 1/2 cups (about) cold water
- Ice Cubes
- Fresh Mint Leaves
- Lemon Slices
Combine chopped mint, ginger, and honey in medium bowl. Add boiling water. Let steep 30 minutes (or more for stronger lemonade). Strain into 4-cup glass measuring cup, pressing on solids to extract liquid. Add lemon juice and enough cold water to measure 4 cups total. Fill glasses with ice cubes. Add lemonade. Garnish with mint leaves and lemon slices. (Can be made 1 day ahead, cover & chill).
